4 Peach Cobbler (& a cute bowl!)


2 of my favorite things ~ baking and fruits!  Especially summer fruits … strawberries, peaches, raspberries, blackberries, cherries & blueberries.  Mmmmmmm, so many to choose from!  Delicious eaten out of hand (or on top of yogurt for breakfast – inside a cute bowl of course!)

I also love to bake with fruit.  Probably my all-time favorite ~ homemade fresh peach cobbler.  I’ve got a GREAT recipe for this. It has more of a biscuit topping instead of crust (although I do love crust as well!)  This is scrumptious.  The peaches need to be soft and ripe enough with some sweetness, otherwise it’s just not as good.  I’ve posted this on FB before and gotten a lot of response, so here it is again.  Give it a try – it’s simple and delicious! 

Peach Cobbler with Biscuit Topping
½ cup sugar
1 T cornstarch
¼ tsp ground cinnamon
5 cups sliced peaches (about 8 medium-large)
1 tsp lemon juice
3 T shortening
1 cup all-purpose flour
1 T sugar
1½ tsp baking powder
½ tsp salt
½ cup milk

Heat oven to 400.  Mix ½ c sugar, cornstarch and cinnamon in 2-quart saucepan.  Stir in peaches and lemon juice.  (I typically add more peaches, because I always want extra!)  Cook, stirring constantly, until mixture thickens and boils.  Boil and stir 1 minute.  Pour into ungreased 2-quart casserole dish, keep peach mixture hot in oven.  Mix flour, 1 T sugar, baking powder and salt.  Cut shortening into flour mixture until it resembles fine crumbs.  Stir in milk.  Drop dough by 6 large spoonfuls onto hot peach mixture.  Bake until topping is golden brown, 25-30 min.  Serve warm (in a cute bowl) and ENJOY!!

While that’s cooking, you can work on a new look for your table.  I love to use bright colors, especially during the summer.  It’s so easy to change the look with just some colorful napkins, unique napkin rings, and flowers… & a bowl of fruit!  :)
I typically do serve fresh fruit with my meals, and of course they are in one of the many bowls in my collection (that I’m obsessed with!)  We’ve got some cute bowls at the shop too – whether they’re ceramic or enamel, super cute – and they’re a simple way to add a different look and style to your table!!
Enamel colanders work great as bowls too!



So many reasons to love summertime, and I do!
